1. Goa and Maharashtra

The Konkan regions of India; Goa and Maharashtra, provide spicy, sour, and hot delicious dishes. Irrespective of its popularity within that belt, not many people get to savour the delicacies outside its confines. Konkani cuisine includes kokum, coconut, tirphal, and a lot of spicy condiments. The Teplaambat preparation of making fish curry is typical in the Konkani area. One can also taste the traditional Kolmbo sambhar along with kadamb, a dish made from cucumber. 

2. Karnataka

In the forests of Karnataka lies the Malnad region, which provides a distinct cuisine of its own which is worthy of appreciation. It is an ideal place for a food-walk because it offers the meaty curries, tangy pickles, and the collection of steamed food. Must-have dishes to try are benne kadabu, a combination of regular idli with rice and coconut, and puli munchi made with the help of coconut and tamarind.

3. Kerala

Mappila cuisine is named after Kerala’s Mappila community, drawing influence from Dutch, Portuguese, British, and Arab cooking traditions. Lover of Mughlai food? Do not forget to try Tellicherry biryani cooked with a typical dum style of cooking meat. Also, taste everyday dish-Puttu by serving it with meat or seafood. Other than this, Arikadukka, Kozhithalayana, and fish biryani are amongst the must-have dishes of this region.

4. Gujarat

Gujarati food is one of the best Indian food known for its sugary sweet taste. To try a different culinary experience altogether, do make a trip to the Kathiawadi region of Gujarat as the food here is spicy and cooked on a wood-fire. The Lasaniya batata and khichdi from Kathiawadare two delicious dishes cooked with garlic and chillies. Sevtamatarsabzi with the local Bhakri bread is one of the best things one can snack on. 

5. Uttarakhand 

The state is divided into two areas; Garhwal and Kumaon. Garhwal’s popular dish is Tor ki dal, Rice, and Tilki Chutney with Mandua roti and Chainsoo, on the other hand, Kumaoni cuisine includes Bhatt ki Churdkani, Bhatt is a locally grown black soya bean.

6. Odisha

Odia cuisine comprises an eclectic mélange of spice and rice. When visiting Odisha, do not forget to try Basi Pakhala, paired with Badi Chuda-fried Badi made up from dried lentil pellets mixed with red chillies and garlic. Other common dishes of the state include Khattas, Dahibaigan, and eggplants cooked in curd. 

7. Telangana

It is particularly famous for Sarva Pindi, a pancake made up of ground lentils, rice flour, and peanuts. Also, you must try Jonna roti paired with the spicy Kooda, Pappucharu, and the tangy tamarind-based Pulusu as an add-on.

8. Kashmir

Kashmiri cuisine includes vegetarian delicacies like GogjeRajma and Duma Alov. Here, Dum Aloo is specially prepared in a typically Kashmiri way. Non-vegetarians can try their hands on NaanQaliya along with Khamiri roti and Kabaraghto satiate his/her hunger for flesh. Also, do try shufti dessert prepared with dry fruits, saffron, and honey.

9. Rajasthan

The famous dish of this state is DaalBaati. Other than this, you can also taste some mouthwatering dishes of Rajasthan like PyaazKachori, GattekiSabzi, PapadkiSabzi, Ghevar, GondkeLaddu, KesarMurg, and Laapsi.
